A bunch of 3-5 beets, or a quart of beets, depending on time of season. Our favorite way to enjoy is to peel and coin, then roast or grill with olive oil, and top with goat cheese and a drizzle of balsamic vinegar. You can also roast whole without peeling, and the peels will slip off.
